Tempted to just go with an installer, but I have already prewired the house with Cat6 in the positions where I want to put cameras so can't imagine installation will be difficult and not sure I need to spend 2-3 times to have an installer do it.

If you are aiming for 8 cameras initially, for sure you will add more over time, I'd go for a 16ch model, that's what I did. 7816N-E2 and 7816N/8P
You will not be able to update the firmware. There are newer 2mp and 4mp cameras that are better than the 3mp in low light..Looking to buy one of the NVR from the spreadsheet link of aliexpress because of the awesome price - but are there still issues with updating the firmware?
Edit - are the following two products compatible?
