Do you have smart plan(the light bulb) enabled? You need that for ivs to work.

Get a hero 7 black. They do 4k 60. It's a great cam, I cant reccomend any other brand that is reliable for for all the bouncing on a trail. Costly, but worth it for the footage you want to view. I use it for filming fpv drone shots. Should be great for a mountain bike. Most if not all...

If you update camera it will more than likely revert to chinese language. It's a chinese camera ported over to english language for sale in usa.

Factory default wont reset anything fw related. Fw has to be loaded onto the cam to affect it. So no it wont, sorry. hth
