Good evening! I'm considering using a NAS system to save video from my Hikvision camera as well as additional cameras as time goes by. My question has to do with power and/or internet outage. If someone breaks into my house they might well cut my power lines and internet feed if they see cameras. I can take care of the power with UPSs. If my internet connection is cut, will my network continue to work and record to the NAS?

Yes, if you really are maintaining power on ALL the components that camera traffic flows through, cutting the internet feed will not affect traffic flowing from cameras to NAS.
'ALL' implies PoE switch that the cameras connect to, NAS, switch that the NAS and PoE switch connects to, any power supplies for non-PoE cameras, any wireless APs for cameras etc.
