If you care about night vision there's no way a phone is going to work. You need a camera with IR which I don't believe any phone has.

Can't you just access the cameras directly bypassing the NVR interface? You can use an app like tinycam, ipcamviewer, etc.

IP cameras don't use a lot of bandwidth. Like maybe 8mbps max. And keep in mind this is all local bandwidth too. It shouldn't affect your outbound bandwidth, so streaming, youtube, etc will all be unaffected.
