would this be overkill for a BI server/plex

Im looking to either buy or build a computer that can do both blue iris and plex. I found this but most people here like intel pc's and all the ones ive ever owned have been intel. this would be my first amd

Here's the specs.

• AMD Ryzen 7 5700 not 5700X just 5700
• GeForce RTX3060 12GB This would probably come out to save power. I dont think its needed for this.
• 16GB DDR4 3000 expandable up to 64gb
• 1TB NVMe SSD
• Windows 11 Home
• RGB Fan x 4

it has space to add 3 3.5 drives total and 4 2.5 drives.
would this be ok or should i just stick with intel?
