Unsure on what i5 CPU for residential camera setup, advice

So after reading many posts, I'm still unsure on what system would be best for my situation. I know I don't need more than a i5-6500 w/ 8GB RAM, but not sure on the additional specs that each CPU has, video card, displayport, etc, and if it matters on form factor (mini, reg)

Devices:
6-7 POE 4MP HIK Cameras
2 Foscams
PLEX w/ possible export of video files to reciever (unsure)
Home Automation System (Vera or Homeseer)

Options:
1 - OptiPlex 7040 i5-6500 3.2 8GB RAM approx $375-400
2 - HP Prodesk 600 G2 i5-6500 3.2 8GB RAM $420
3 - HP EliteDesk 800 G2 i5-6500T 2.5 8GB RAM $410

All HDs are approx 500GB

Thoughts?

do not get any i5-6500T they are totally under powered any with a T at the end

None HP is junk they also lie to their customers! Also I wouldn't get Vera unless you like making a luup code for all the simple automations

Stop with this bullshit..It's not OK to mislead folks...The elitedesks are some of the best business class PC's available...

Dedicate the PC to blue iris... Don't run Plex on the same machine... Don't use T processors.. Consider the dahua starlight over 4mp hik if using outside...The HP tower and sff will have more space for drives...See spec sheets ..

The HD that comes with is just used for the OS and a few utility programs you might run on this PC.
Get a WD Purple HD to add to this PC for recording the video to.
I got a 4 tb, seems like its going to save months of recording for me, but I only have 5 cams at the moment.

Let me ask general question - why purple? Is it more reliable for rewriting? I'm using this in home/residential setting. Same 6-8 cameras.

Purples are designed specifically for NVR type applications. WD figured out that when recording video 24/7, the drive is not used like in other applications, and they "tweaked" purples for this.
So yes, purples are more reliable when used for recording cameras.

Its a common recommendation here.
4tb may be a little overkill, but the price was reasonable, and I don't have to worry about wanting to look at something that happened a couple of weeks ago.
