Thoughts on This Setup (Dahua/Powerline Adapter + PoE)

To start off, I have a 2 story house which is sided with limestone rock and the soffit's are a good 20+ feet up in the air. Being that it is limestone and 2 story (no easily accessible attic) running cat5/6 cable would be an absolute nightmare. My solution..

The Ghost wire for under the windows is a concern to me as the wires maybe very thin and you'll be passing significant power through them to power the PoE cameras.

Considering your setup, I would consider running burial cable in a under ground conduit around your house and then bringing the conduit up 6-7 feet to a junction box on your wall, and then placing the camera on that junction box. This way you can minimize working with the limestone.

If you do this on the corners of the house you can probably bring 2-3 cat5e lines up in a 1/2" conduit to a couple of junction box for 2-3 cameras so that you minimize the number of conduit runs up the wall.

iirc someone had shown some pictures here of actually placing junction boxes on limestone and working with a grinder to create a flat circular surface on the stone for the junction box.

I contacted a guy today that runs data cable and conduit for a living and explained what I want . He's booked for 2 weeks unfortunately but that will give me time to do more planning and research in the meantime.
