I have an IPC-HFW5241E-Z12E. What profile should I be using? General, Full time or Day/Night when using the Dahua Sunrise/Sunset service?

In the end it doesn't matter because the API will switch it automatically regardless of what you put.
I use the General to test out different settings until I move it to the day or night and it always switches come next sunrise/sunset.
