Before posting this question I did some search on here to see what others have to say. Looks like using computer instead of NVR along with BI is the way to go.

Are there any features I would lose if I do not go with NVR?

My reason to with computer is I can tweak settings, mix and match different brand, have all my recordings on ssd, take the money for nvr and get much much better server, easily expand storage etc...

If I have hyper v turned on does it interfere with the BI in anyway?

If you go with a BI build then you will lose some AI functionality that your camera may or may not have. However, I would rather give that up anyway so I can have complete hardware control over my build.

You can install BI in a VM. I have this running on two installations now. You just need to make sure your cameras support substreams since you won't be able to use QS.
