Getting the hang of it

I'm putting together a Sliger rack-mounted NAS built around an i5-14600K, 32 GB of RAM, and an HBA SAS/SATA controller supporting up to 12 drives. It'll mainly host Jellyfin and Blue Iris.

I'm torn on the OS. Part of me wants to keep it simple with a stripped-down Windows 11 install and just let everything run bare metal. But the more I think about it, the more Proxmox is tempting me, with a Windows VM for Blue Iris and either a Linux or Windows VM for Jellyfin.

I know plenty of you degenerates are running similar setups. What route did you take, and would you do anything differently? The whole point is to get these services off my gaming PC so it doesn't have to sit there running 24/7.
