Multi-site VPN connected camera installation

Hi all!

So we own a small medical testing (lab) company. There are 3 locations, each connected via a Meraki MX85 site to site VPN so we can access resources on remote networks. We also have 500mbps of bandwidth per site via redundant fiber. Here is what I want to do: 1) add 10-20 cameras per site (leaning Dahua) 2) connect all back to one server at a remote site. At the end of it all we may have up to 60 cameras running so I feel pretty good about using BI 5 for this, and will spec out a server with M2 OS drive and multiple SSD's. We also can back up to an Amazon S3 bucket nightly. The cameras will be on 24/7 recording and need to retain 30 days worth of recordings.

Q1) What do I need for server/memory architecture, or is this too much for a single server?
Q2) How much storage for that much video
Q3) if we wanted to make one of the other sites a "fail over" (2 of the sites are in California where they shut off the power when the wind blows. Literally) is it possible to run BI like this?
