If I put a hard drive from a hikvision dvr into a new one, can it work without having to wipe/reinitialize.

I would proceed with caution on doing that. I cannot speak for Hik but all the Dahua stuff I swapped around the answer is No. If you have anything mission critical I would Import it to a backup before I did that.
