I have access to a Hikvision DS-7608NI-EV2/8P....is that worth using for a starter system or should I look else where?

You want to pair the NVR with the Cameras .. so depends also on the cameras and more advance tier options you are considering ..

What cameras do you plan to pair up with this NVR ?
 
currently just one Empiretec 5442T-ze....will probably be adding more of the same, local guy wants to sell vitek cams to me but im not sold on them yet

Get a Dahua OEM NVR then ..

otherwise PoE switch and PC running something like Blue Iris .. ( Dahua used to have a free VMS also .. )
 
at this point I'm not wanting to go to a PC....need this to be simple and plug and play. Will look into what Andy has....thanks

There is NO surveillance system in existence that is "plug n play".
All systems need to be properly setup and tuned to do its's job properly.
Always keep the brand of NVR's and cameras the same brand, if you expect any compatibility with each other.
Empiretech cameras will out do Vitek, especially at night.

If you plan to get more cameras, consider a 16 port model instead of an 8 port model
