Every so often I hear a couple of beeps from my NVR or get the email to say it's run out of space. It has a 2Tb drive in it.

I have 4 cameras running. Is there any way of setting how many days I can keep? or do I just let it run out and self correct?

disable disk full alarm notifications and configure it to over-write..

It already overwrites. So technically doesn't cause a problem. Is there no way of limiting the disk used?

Also by turning off the No Space alert, does it stop the NVR from putting out the audible alert?

there is but thats an entirely different setup, you have to run fixed bitrates and do the math on your own.. the alarm is to let you know your math was wrong..

for an overwrite setup; which is by far the most common, disable that alarm and it should disable both the beep and the email alert.
