Run the cables now, you can decide to leave out cameras now if you want, and add any later if you feel the need.

If you like, you can paint the camera bodies to match the house, and they will be less noticeable.

Are there any rules regarding cameras going right near the outdoor wall lighting outside the garage on either side? Would putting it directly next to the light or directly above or below the light cause issues with the camera? I assume a dome camera might have issues with some glare, but I'm using bullets or turrets.
