I kind of confused when it comes to "break time". I set up a few of my cams with zones/zone crossing but I'm not sure how to set up the break time for this. Is there a rule of thumb regarding break time with regard to different scenarios?

So if I want to record 10 seconds, I enter 10, right. So if the zones are crossed after 10 seconds, it should again retrigger, and start recording?

yes....I would set a minimum of 30 seconds...if all you are using is zone crossing you dont want to miss something vital while the subject is not crossing zones.
