Is there a way to take a snapshot in the UI2 interface?

I'm reasonably certain you know this, but Ui2.htm is not a part of the Blue Iris software. You could click on a camera (to maximize that camera's view) and then do a screen print. Not pretty, but it would work.

Perhap this is useful:

A single JPEG image from a specific camera, with optional quality (q) and scale (s) parameters. Quality is a percentage from 1-100, and scale may be any number >0.

Also, it is kind of a hidden feature, but if you are using a device with a mouse, you can left-click-and-hold for about 1 second and a context menu will appear which allows you to trigger the motion detector for the camera under the pointer or start/stop a manual recording.
