The first thing to do is to use the cable gland that comes with most cameras. Next use a dab of dielectric grease on both the RJ and power connectors. Once everything is connect and, hopefully, the gland is assembled, wrap the whole connector and out onto the cable at both sides with a self vulcanizing tape like Coax seal. Then wrap that with a good quality electrical tape like 3M 33+ or better and extend it past the self vulcanizing tape. The entire connection should be enclosed in a weather proof/resistant enclosure or box. Even moisture from condensation with temperature changes will, over time, cause problems especially with RJ connectors on a PoE system.

Some links to the items @sebastiantombs mentioned ( I realize it's likely different in the UK but at least you'll get a better idea) ==>> here.
You'll also get some elaboration of how moisture gets sucked into junction boxes.
