180 degree camera varifocal lens single feed recommendation

Why would anyone build a multi-sensor cam designed for a single feed, and build it with varifocal lenses? That would create blind spots in the video feed whenever you zoomed in.

Something between 130 to 180 degree view single feed would be great. I do not know how high it will be mounted (will be mounted upside down, facing downwards/ground)
yet to decide on the fixed lens.
