It unlocks additional detection features (ie. Smart Plan , Tripwire, Intrusion), but I'm not sure if it was supposed to upgrade streams & resolution. I was just happy to get better detection via Tripwire.
EDIT: I believe the Dahua equivalent camera is the IPC-HDW2531T-AS-S2, see link for specs.
I'm on an older version (V2.820.0000000.28.R, Build Date: 2021-03-23) but have the same settings. From what I have seen a D1 max resolution for a sub stream is fairly normal for a camera at this price point.
EDIT: From the spec sheet of the IP5M-T1179E:

If the updateSerial is showing IPC-HFW3841EP-SA, I would use one of the firmwares listed on the Dahua page for that camera.

I just received the Amcrest IP8M-T2669E-AI and can confirm it's the same as the Dahua IPC-HDW3841TM-AS.
It's system info screen states:

Hoping somebody can help me out with my attempts to flash my Amcrest IP5M-T1179EW to Dahua IPC-HDW2531TP-AS firmware. I am hoping to enable some of the IVS functions but haven't had any luck with changing the firmware.

If this was done on an AMD based Synology, (DS1621+) could you run deepstack on a RPi4 with an Intel neural compute stick or a Jetson Nano? If so, do you think it would help / speed up the image process times?
