I got an EliteDesk 800 G2 form a guy and it has a 120gb SSD with Win 10 Home. I plan on leaving that SSD and getting a WD purple to put into the Sata slot and have my recordings go to it. Is this right?

I use a 128 SSD for the system, then have a 10T WD purple for the video. Works great!
There is a bunch of processors that can be used in the elite 800 G2, so depending on the camera load and the processor.
Since you already have it, I would try it. The new sub stream setup BI has not is excellent on CPU usage.

That's not bad.
I run an I5-8500 with around 24 cameras on it. Several are low res, bunch or 4Mp and have 3 of the 8M running 12 FPS in there too.
You can look up the differences from I5-6600 and I5-8500.
Also look for blue iris helper.

Which means either you have incredible self control, or you just haven't been here very long. Most of us are more in the "where else could I use a new camera." category.

I have 3 outside cameras for the front door. I have 7 cameras in the public areas inside the house, Every door has an inside camera pointing at it. Every door has at least one outside camera.
Have you tested the cameras at night , with a bad guy wearing a hoodie and face mask, if you can not ID them then you do not have enough cameras.
