Hikvision recording channel resolution question?

I have several 7600s hooked up with both 3 and 4MP Hikvision cameras and all record at the max frame rate possible (20 for 3, 25 for 4) at around 4096 bitrate. As long as the switch's total throughput is not exceeded on the NVR, (40/8=5Mbps max per channel), it should work perfectly fine.
The max throughput is the only thing that seems correct on the image you posted. When in doubt, refer directly to Hikvision's own spec sheets:
76xx-NI-E1/2 revision (newer)

Based on the 40Mbps claim, I'm guessing you have the older hardware revision. Check the model sticker on the bottom to be sure. The newer model has improved throughput it appears. (50 up from 40, on the 8CH model)
