Somehow when I double click a camera, that camera pauses. I am not seeing the setting that makes it open that camera to fullscreen. I am sure it is obvious, but I am not seeing it. Does anyone know where that setting is?

The top setting lets you decide what happens on double-click. One of the options is "Pause", which you probably selected by accident with the mouse wheel at some point.
