I’ve been running Wireguard on a Raspberry Pi4 for a few years. Very reliable and easy to use. I now access my cameras and NAS through the vpn server.

I cannot see why. Obviously you will need a ddns like noip or duckdns to deal with not having a static IP address from your phone provider.

How much RAM for Raspberry PiVPN?
I run Wireguard on a Raspberry Pi 4 with 2Gb ram. That is a standard non lite RPOs.

Power adapter for POE camera
As well as initial set up I used the 12v supply when testing locations along with a power line adapter.

If you can view it within your lan you can view it outside your lan via the vpn
