Ok, I feel like an absolute idiot.
I went searching on the POE switch for a reset button and noticed this little switch was ON.
Turned it off and BAM! There are all my cameras.
Now I know what it does

I think I agree with you. Must be a network issue.
Tried those steps, nothing shows up.
I even went and bought another cam today, nothing shows up.
I don't even know where to begin to look for network issues. Should I consider moving the NVR to another switch (in case this one is faulty)?
Yes, I have restarted the NVR a few times.
Also reset back to factory and started again.
Yes, all passwords are the same (except for the dahua wifi cam which is the default)
The only thing I have not tried is unplugging the working cameras from the POE Switch (for fear of loosing everything)...
This shows 2 cams in red.
1st one (port 37777) is the dahua wifi cam.
2nd one is an onvif compatible cam.
Both were connected previously and working fine.
Both are accessible through their portals.
Passwords correct.
All the ones that are green are ok. It's the other 3 that won't show up in the search (or when manually entered, wont connect).
I'll add them back in manually and send you another image.
