Raspberry Pi for UI3?

I have several older monitors laying around that I would like to put to use. I am thinking of using a Raspberry Pi to load up UI3 on. I know its not the latest tech, but the price is right given I have the displays.

What hardware would be recommended for this endeavor? Pi 4 B? 3 B? How much memory? Some other version? I have plenty of keyboards and mice laying around, so I really on need a CPU to run a monitor. I've seen the thread about setting it up and would generally follow that, unless someone has better ideas.

Or is there some other hardware I should be looking at for this experiment?
